Alubias Blanca/White Bean Dip

Dips are fun to add to any meal but especially as an entrée and great for Brunch.

white bean dip
Yields1 Serving
 250 g Alubias Blanca/ white beans
 2 Spring Onions or half a leek finely chopped
 2 tbsp Olive oil for frying
 ¼ tsp Ground cumin
 ¼ tsp Ground nutmeg
 Salt and Pepper to Taste

Cook, wash and drain the white beans and place in a food processor. Or use a jar of already cooked Alibia Blanca.

Fry the spring onions ca. 5min, then add the cumin and nutmeg and salt and cook for another 5 min. Place 1 Tbsp. Of the fried spring onions to one side. Add the remaining mixture with the oil to the beans in the food processor. Mix until desired consistency. Pour in a serving bowl and sprinkle the fried onion on top.
