I like to serve this with my Vegan Frittata but it's equally as good served with tortilla chips for dipping.

guacamole

 1 Large ripe Hass Avocado
 Half a tomato in small cubes
 Half a red onion finely chopped
 Squeeze of Lime juice
 Salt & pepper to taste

Open the avocados and scoop out the flesh with a tablespoon. Remove the pit and keep it to the side.

Mash the flesh with a fork.

Stir in the ingredients, tomatoes, onion and a good squeeze of lime.

A trick is place the pit in the guacamole this way it doesn’t brown.
